Search for sushi in Leipzig and you quickly land on one term: all-you-can-eat. One price, order as much as you like – it sounds tempting at first. But it isn’t the only way to go out for sushi, and for many people it isn’t the better one either. All-you-can-eat or à la carte: the difference

With all-you-can-eat you pay a fixed price and order as much as you want. The concept lives on volume: it pays off if you eat a lot, and it works best when the kitchen can prepare large quantities at once.

With à la carte sushi you pay per dish. In exchange, you decide how much comes to the table – and every piece is rolled to order. No pre-prepared tray, no leftovers, no roll that’s been sitting around for a while.

Both have their place. But the question isn’t only “how much”, it’s also “how fresh”. And that’s where the two approaches differ most clearly: when every piece is made individually, you can handle the fish differently – and you can taste it.

To be straightforward about it: Mami Viet is not an all-you-can-eat restaurant. We deliberately went the other way – less quantity at once, freshly prepared instead.

Why freshly rolled tastes different

Sushi is made of very few ingredients. That’s exactly why every weakness shows immediately. Three things make the difference:

  • The rice. Freshly seasoned sushi rice is warm to lukewarm, loose and slightly tangy. Leave it standing too long and it turns firm and dry – and even the best fish won’t save it.
  • The fish. Salmon and tuna taste best when they’re cut shortly before serving. The texture stays tender and the colour vivid.
  • The nori sheet. Freshly rolled, it stays crisp. After a long wait it goes soft and chewy.

Sushi at Mami Viet: what’s on the plate

At Mami Viet on Merseburger Str. 107, Vietnamese cuisine meets Japanese sushi craft. On the menu you’ll find, among others:

  • Maki (6 pieces) – from €4.50 – classically rolled with the nori outside: sake, tekka, kappa, avocado and more
  • Nigiri (2 pieces) – from €4.00 – sake, maguro, hamachi, unagi, ebi, inari, avocado
  • Sashimi – from €6.00 – pure fish without rice, plus a sashimi mix of 9 pieces
  • Inside out (8 pieces) – from €9.00 – rice outside, sesame on top
  • Mami Crunchy Rolls (6 pieces) – €10.00 – crispy, for example sake, ebi, tuna or yasai
  • Mami Special Rolls (8 pieces) – from €12.00 – our house rolls like Rock Dragon, White Tiger or Kiss on Fire
  • Sushi menus – from €18.00 – ready-made platters, up to a menu for two people

That’s exactly where à la carte pays off: a single maki starts at €4.50, a pair of nigiri at €4.00. So you can start small, work your way through and re-order whatever you like – instead of paying a flat rate you then have to “eat your way through”. Vegetarian and vegan too: sushi without fish

Sushi is far from being just for fish eaters. We have a wide selection of vegetarian and vegan sushi:

  • Kappa maki (cucumber), avocado maki, asupara maki (asparagus), shinko and kanpyo maki – from €4.50
  • Avocado nigiri from €4.50 and inari nigiri (sweet marinated tofu) at €5.00
  • Yasai inside out at €9.00 and Yasai Crunchy Roll at €10.00 – vegetable rolls
  • Green Roll and Buddha Roll – our fish-free special rolls, €12.00 each
  • Mami Veggie Menü at €18.00 – if you’d like a whole platter straight away

This deliberately isn’t a token offering: from a single maki to a complete menu, you can eat entirely meat-free. On top of that come our vegetarian and vegan dishes from Vietnamese cuisine – many mains are available with tofu, and the Pho 34 is even vegan with tofu and seitan. That’s especially handy for mixed groups: at the same table one person can eat salmon nigiri, another vegan sushi and another a warm noodle soup – without anyone having to settle for a makeshift option.

Sushi to share – and to take away

À-la-carte sushi has another advantage: you can share it. Instead of everyone eating their own set menu, several platters go into the middle of the table and everybody tries their way through. For groups, birthdays or a relaxed evening with friends, that works noticeably better than a fixed price per head.

How to spot fresh sushi

You don’t need to be an expert to tell whether your sushi was made fresh. These four things stand out immediately:

  • The rice isn’t cold. Good sushi rice arrives lukewarm to room temperature. Cold, firm rice means it has been sitting for a while.
  • The nori crunches. When you bite in, the sheet should give slightly rather than cling to your teeth.
  • The fish has a sheen. Freshly cut salmon and tuna look silky, not dull or dry at the edges.
  • The roll holds together. Freshly rolled, the shape stays stable instead of falling apart when you pick it up.

The simplest thing, of course, is to be able to watch. That’s exactly why our sushi counter is open to the room – sit at the bar and you can see it happening.
